Prosciutto Sandwich with Burrata & Pesto

Lately, I’ve been craving a good, tasty sandwich. You know, one of those deli ones from when we were kids except with grown up ingredients that my palate just enjoys more these days. Enter my grown up version of my original go-to order …A ham, cheese, lettuce, onion and tomato with a bit of mayo sandwich. 

So the other day I got to it and decided on this… A prosciutto (ham), burrata (cheese), arugula (lettuce), shallot (onion) and tomato with a bit of pesto (substitute for mayo) sandwich. I drizzled a bit of some good olive oil over the top and can I just say, WOW! 

The next time, you’re craving a sandwich definitely make this one. It will not disappoint!

Ingredients:

  • 1 loaf of semolina bread (or any baguette of choice), toasted
  • 2-3 tablespoons of pesto (I use this store bought one but you could also make your own)
  • 5-6 slices of prosciutto
  • 2 large balls of burrata
  • 2-3 small heirloom tomatoes, sliced
  • 1 small shallot, sliced
  • 1 bunch of Arugula
  • 1-2 tablespoons of olive oil, divided (brushing & drizzling)

Method:

Begin by preheating your oven to 400°F (200°C).

Next, cut the ends of the semolina bread and slice down the middle. Brush both sides of the bread  with 1½ tablespoons of olive oil and place on a baking sheet. Bake the bread in a preheated oven for about 10 minutes or until it’s golden and slightly crispy.

Once the bread is done, remove it from the oven and spread a generous amount of pesto on both sides.

Then begin tearing up pieces of the burrata balls and placing them on both sides of the bread. Next, place slices of heirloom tomatoes on top of the burrata on one side and layer the prosciutto slices evenly on the other side.

Next, top with shallot slices and a handful of fresh arugula.

To finish off, drizzle remaining olive oil over the arugula for added flavor.

Cut into desired sandwich sizes and enjoy!
