Just wait until the end for what I’m calling, “Al’s astute observation!” 😂 I won’t lie, I was a bit nervous with this one, considering the pumpkin fiasco, but it turned out pretty darn good. Definitely give it a try. That pancetta that you had on hand, definitely made the dish! Comment “pumpkin” for the full recipe.

Dead! Also, he looked straight at me and was like “I got you the pumpkin!” FYI - it had a sticker that said it was a Halloween pumpkin, i.e. for decorating. 😂😂😂

Please tell me I’m not the only one that sends my husband out to get something and he comes back (without a care in the world) with something that if we had done it ourselves, would have never made sense to buy. 😂

If you’ve been following, you know I’m now on my third cookbook submission. Fingers crossed! So in the meantime, I continue to cook recipes from my proposed book (hope I’m making you proud, mom!) to ensure they are exactly like hers and since I don’t have her here, it’s…cook, evaluate, modify, repeat. 🥹
