As summer approaches, I look for easy recipes. Ones that are light and can be prepped the day before so that dinner is on the table in no time. These chicken gyros are my interpretation of the ones I love from my local Greek restaurant. The marinated chicken’s bright flavors paired with the tanginess of the Tzatziki and the warmth of the pita, is a trifecta you can’t ignore. My love for Mediterranean food truly runs deep! Ingredients:
- 1 lb chicken breast, thinly sliced (or boneless chicken thighs)
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Juice of 1 lemon
- 3-4 large garlic cloves, minced
- 1 teaspoon dried oregano
- 3 tablespoons of greek yogurt
- Salt and pepper to taste
- 1 cup store-bought tzatziki sauce (my favorite is Cedar’s)
- 4 pita bread rounds
- 1 cup shredded lettuce
- 1 tomato, thinly sliced
- 1/2 red onion, thinly sliced
- Crumbled feta cheese (optional)
Method:
Marinate the Chicken: Thinly slice chicken then in a bowl, combine olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, yogurt, salt, and pepper. Add chicken to the marinade, ensuring it’s well coated. Cover the bowl and refrigerate for at least 30 minutes. Remove from the refrigerator and let it come to room temperature (about 10 minutes).
Prep Vegetables: While marinating the chicken, thinly slice all vegetables. Set aside.
Preheat your grill to medium-high heat, around 375-400°F (190-200°C). Then remove the chicken from the marinade and discard any excess marinade. Place the chicken slices on the preheated grill and grill for about 4-5 minutes on each side or until fully cooked through and nicely charred with grill marks. Once cooked, remove the chicken from the grill and set aside.
Or:
Heat a skillet over medium-high heat and add the marinated chicken slices. Cook for 5-6 minutes on each side or until fully cooked and golden brown. Remove from heat and set aside.
Warm the Pita Bread: Heat the pita bread rounds in a dry skillet or over the burner directly for a few seconds on each side.
Lastly, Spread a generous amount of tzatziki sauce over each warmed pita bread round.Top with shredded lettuce, sliced tomatoes, red onion, cooked chicken slices, and crumbled feta cheese (optional). Roll up the filled pita bread tightly to enclose the filling and serve immediately. Enjoy!
